Baked Mozzarella Sticks

12 Mozzarella Cheese sticks

1 cup Panko bread crumbs

1 cup Italian blend of bread crumbs

1/4 parmesan cheese

salt and pepper

2 eggs

1 cup of flour

 

Step one: Cut the cheese sticks in half

Step two: combine the bread crumbs, parmesan cheese, salt and pepper in one bowl.

Step three: put the flour in a separate bowl

Step four: scramble the eggs in their own bowl.

Step five: dip the cheese sticks in the flour then eggs then the bread crumb mix.

Step six: dip the breaded cheese sticks in the eggs again then back in the bread crumb mix. Place on a baking sheet covered in wax paper.

Step seven: repeat steps five and six for all the cheese sticks.

Step eight: freeze for one hour.

Step nine: bake at 400 for 12-15 minutes.

Step ten: let cool then serve with marinara sauce.

COP Cookies

This is a great website!  I am inspired to use it to record family history, as well as wonderful recipes.

This is the recipe for the first thing I remember making with my mother.  She called it “No Bake Cookies”, but our family has renamed it “COP Cookies” (C- chocolate, O- oatmeal, and P- peanut butter).  As a tradition at Christmas we brought plates of COP Cookies to the gate guards at the military bases where we lived.

This is now a favorite of four generations in our family.

Christmas Cake

This is based on a standard chocolate cake recipe adapted from The Cake Mix Doctor with some Christmas cheer mixed in. You can customize the recipe to your own taste by adding your own favorite mix-ins and flavors. If you don’t care for mint, then leave it out and go all chocolate. Decorate with your own style to match the occasion.

Red Velvet Cake Balls
